banana & peanut butter muffins {gf, df}

The New Year is just around the corner and it's the time of year we are all looking for those healthier alternatives to the sweet treats we enjoy. Heading to the gym and taking up a new fitness regime is also high on peoples priorities and of course, consuming a more healthy and balanced diet is also up there with those things.  As much as I am not one for resolutions or starting new things in the New Year, I do see how it is a good time to set yourself some new goals and start a new routine. A lot of people choose to do it in the New Year as of course, time is pretty much resetting itself and we see the New Year as the perfect start for anything.

These muffins are a great healthier alternative to your standard sweet treat. Packed full of goodness from the bananas and peanut butter, these are sure to hit the spot if you're craving something sweet. As with anything of course, they are to be eaten in moderation so don't think that you can eat 3 or 4 of these just because they are a healthier alternative! Too much of anything isn't good for you, including broccoli and greens :)
The recipe can be easily adapted to make it vegan too; simply use a vegan protein powder!

(Makes 10-12 muffins)

Muffins
1 Scoop Banana or Vanilla Protein
200g Self-raising Flour
130g Coconut Sugar
3 Ripe Bananas (mashed)
200g Peanut Butter
1 Tsp. Vanilla Essence
Splash Almond Milk

Icing
2 Cans Coconut Milk (hard part only)
4 Heaped Tbsp. Smooth Peanut Butter
25ml Almond Milk

method

Pre-heat oven to 150 degrees centigrade and prepare muffin cases into oven tins; leave to one side.
Mix all dry muffin ingredients in a bowl.
In a separate bowl mix all wet ingredients.
Add the wet to the dry and mix well.
Spoon the mixture into each muffin case filling each one only 3/4's full.
Pop in the oven for 20 minutes.
Whilst the muffins bake you can make your frosting-
Simple whizz all frosting ingredients in a blender and pop in the fridge for later.
Remove muffins from the oven and leave to cool completely.
Frost each muffin with icing.

Store in an airtight container in the fridge for up to 4 days.
