​arctic power berries blackcurrant cakes

Like the last recipe I posted this one just came to me randomly one day. It was literally a quick and easy 'throw it all together in a bowl and hope for the best' kind of recipe. It couldn't have turned out any better either! They have a lovely moist and cakey texture and the flavour of the blackcurrants is so good!
I made 4 fairly big heart shaped cakes with this so it would probably make 8-10 smaller cupcakes...

Ingredients

1 cup almond flour
1/2 cup blackcurrant arctic power berries powder
2 eggs
1/4 cup coconut sugar
1/2 tsp. baking powder
1 tbsp. almond milk

Directions-

- Pre-heat the oven to 175 degrees C
- Add almond flour, coconut sugar, Arctic Berries Powder and baking powder in a mixing bowl.
- Add eggs and combine, then add the almond milk and mix together until it forms a cake-like batter.
- Place in baking tins or muffin cases and pop in the oven for 15-20 minutes. Please keep an eye on them after 15 minutes to ensure they don't burn.
- Check they are cooked by popping a knife through the middle of one. If it comes out clean they are ready.
- Leave to cool and enjoy!

The cakes should be moist and not dry. If they become dry they have maybe been left in the oven for a little too long.
I made a chocolate 'sauce' to go with mine using Total 0% Greek Yoghurt mixed with Choc Shot and honey.
