blueberry cookies {gf}


Blueberries in cookies; bad idea or GENIUS?! I'm going with genius on this one guys. Sometimes we just need a cookie to crunch on while we work or with our cup of tea/coffee so I've got you covered with these healthier White Chocolate and Blueberry Cookies. They've got fruit in so that makes them extra healthy right?!

In all seriousness, this flavour combination works ridiculously well and if for some reason you don't like blueberries or white chocolate (who are you!?!) you can change the fruit to anything you like and the chocolate to milk or dark. The cookie base on it's own actually makes pretty epic cookies actually so if you fancy plain and simple then go for it!

(Makes 8-10 cookies)

1 1/2 Cups Plain Flour
3/4 Cup Coconut Sugar
3/4 Tsp. Baking Powder
1/2 Cup Coconut Oil (melted)
1 Egg
1 Tsp. Vanilla
1/2 Cup Blueberries
1/2 Cup White Chocolate Chips

method

Pre-heat oven to 160 degrees Centigrade and prepare a sheet of non-stick paper on a baking tray; pop to one side.
Beat oil and sugar together to form a smooth mix; add egg and vanilla and mix.
Add flour and baking powder and beat until smooth.
Fold in blueberries and chocolate chips gently, trying not to burst any of the blueberries.
Using a spoon place a dollop of the mixture onto the baking tray ensuring there's enough space between each pile as they will spread when in the oven.
Bake for 15-18 minutes or until they start to golden.
Remove from the oven and leave to cool completely.

Store in an airtight container for up to 3 days.
