cakey bakewell squares {gf, df}


When someone says the word Bakewell to you it automatically brings that thought of a good old Bakewell Tart into your mind. That combined fruity and almond-y flavour to create a delicious sweet treat. In this recipe I have taken the classic Bakewell Tart and reinvented it into cakey Bakewell squares. The flavour of these cake squares is the exact same as a delicious Bakewell Tart but this time you get the 'squidge' of a yummy piece of cake! Sweet almond flavour mixed with a slight tartness of the raspberries. A perfect flavour combination if you ask me ;)

(Makes 18-20 pieces)

175g Self-raising Flour
175g Sweetener of Choice (I used Natvia)
175g Ground Almonds
200g Raspberries
1/3 Cup Almond Milk
110g Coconut Oil (melted)
3 Eggs
1 Tsp. Vanilla

method


Pre-heat the oven to 180 degrees centigrade and line a large baking dish/brownie tray with non-stick paper. Leave to one side.
Mix all dry ingredients (not raspberries) in a bowl then add all wet and mix well.
Add raspberries and gently fold in.
Pour the m mixture into your baking tray/dish and bake for 30-35 minutes or until a knife comes out clear when put in the centre of the bake.
Remove from the oven and leave to cool completely before cutting.

Store in an airtight container for up to 3 days.
