Chicken Sausages with Vegetables and Rice |

This recipe is one of the simplest and easiest recipes I've done to date. Using Heck Chicken Italia sausages and Tilda Roasted Vegetable Basmati Rice, which are both extremely versatile and easy to cook with. This dish is perfect if you are short on time or if you want to pre-prepare for another day.
It takes around 20 minutes to cook and serves two people.

Recipe
1 Pack Heck Chicken Italia Sausages
1 Large Head of Broccoli
2 Handfuls of Spinach
1 Red Pepper
1 Yellow Pepper
6 Medium Mushrooms
1 Pack Tilda Roasted Vegetable Basmati Rice
Salt
Pepper
Mixed Herbs
Olive Oil to cook

Method
Heat the grill on a high heat and grill the sausages for 15 minutes, turning regularly.
Whilst the sausages are cooking prepare your vegetables-
Chop the peppers into 1cm pieces, slice the mushrooms and chop the broccoli into smaller heads.
Heat a splash of olive oil in a large frying pan on a medium to high heat.
Put the mushrooms, peppers, a sprinkle of mixed herbs and salt and pepper into the pan and cook for around 5 minutes.
Add the broccoli to the pan and cook for another 2-3 minutes.
The sausages should be cooked by now so take them out from under the grill and chop into small pieces. Put them in the pan with the vegetables. Mix together and cook for 2-3 minutes.
Take off the heat and add the spinach- mixing it in.
Heat the rice according to instructions- 2 minutes in the microwave.
Serve the sausages and vegetables with the rice.
You can also add the rice to the pan instead of microwaving it if you prefer. Cooking it with the vegetables and sausages does give it a slightly different flavour but just as delicious!
