​Choco-Coconut Flapjack Pieces

Note: Protein bar and used in this recipe was gifted.

The go-to grab-and-go snack; flapjack. Bringing you a slightly more bite sized version with these Protein Choco-Coconut Flapjack. Combining two flavours that are definitely a match made in heaven! You really can't beat chocolate and coconut combined; dream combination!
Using the wonderful Barebells as part of this recipe to add a little extra oomph :)

Flapjack
140g Oats
40g Desiccated Coconut 
40g Almond Butter
30g Melted Coconut Oil
50g Coconut Sugar
2 Tbsp. Maple Syrup

Chocolate Layer
150g 75%+ Dark Chocolate
1 Barebells Choco-Coconut Bar, chopped into small pieces

Method


Pre-heat oven to 175 C/350 F degrees and line a 7x10" shallow tin; pop to one side.
In a bowl mix oats, coconut sugar and desiccated coconut.
In a separate bowl mix almond butter, maple syrup and coconut oil until fully blended.
Pour over oats and mix well until everything is covered with the wet mixture.
​Pour mix into your lined tin and press down firmly with your hands.
Sprinkle over chopped Barebells bar and bake for 20-22 minutes.
​ Remove from the oven and leave to cool completely.

Once cool melt chocolate in the microwave being careful not to burn it!
Pour over the flapjack and leave to set in the fridge for 4-5 hours.

Store in an airtight container for up to 2 weeks.
