CHOCOLATE & Ginger bROWNIE cAKe

​A lot of you seem to be absolutely loving the chocolate bakes that I am creating at the moment. Everything from simple chocolate crispy cakes all the way to chocolate cupcakes and cakes are a huge hit both on social media and here on my blog. So, I thought it would only be fair if I continued with the chocolate themed bakes for a little longer...

Brownies are one of my all time favourite things to bake. The chocolatier and gooier the better if you ask me. With this brownie cake I though I would take the traditional brownie and instead of making them square, I would make it into a cake. I also added ginger to these chocolate brownies to make them a little more fitting to autumn and also to bring a whole new dimension to the simple snack. Let me tell you; the ginger and chocolate combination works a real treat in this! A hint of ginger with a full POW of chocolate...perfect!

RECIPE

(Serves 8-10)

150g Coconut Butter
​225g Dark Chocolate 
200g Coconut Sugar
75g Plain Flour
2 Tbsp. Maca Powder
3 Tsp. Ginger
​3 Eggs

mETHOD

Pre-heat oven to 180 degrees centigrade and grease a medium cake tin with a little oil or butter. Pop to one side.
Melt chocolate and coconut butter together in a bowl over a pan of boiling water. Mix regularly as it begins to melt. 

Separate your eggs yolks and whites put the yolks into your melted chocolate mixture; stir them in and pop to one side.
In a separate bowl beat egg whites until they form soft peaks- fold flour, ginger, coconut sugar and maca powder in slowly.
Slowly add the melted chocolate as you continue to fold the mixture.
Pour into your pre-prepared cake tin and bake for 30-35 minutes, checking every few minutes after 25 minutes.
If you want more of a gooey centre then bake for around 25 minutes. For a firmer centre bake for the full 35 minutes.

Store in Ain airtight container for up to 5 days.
