Today marks the first day of not being in childcare! Since I was 16 I have looked after children and worked in the childcare industry so today has been a little weird and extremely quiet! It has been quite nice though I must admit. So, I thought why not celebrate with making a cake! I sat down for a while and wrote down loads of ideas, flavour combinations and ingredient combinations (and a bit of doodling) to eventually think that, do you know what?! Chocolate and strawberry make an AWESOME combo! I had most of the ingredients in but I took a walk to my local Lidl and Tesco to stock up on the few bits I didn't have. When back home it was oven on and bake!
Here's what you will need:
Ingredients-
1/2 cup almond flour
1/2 cup coconut flour
1/2 cup coconut sugar
1 tsp. baking powder
3 eggs
1/2 cup almond milk
2 tsp. vanilla essence
100g dark chocolate
1 cup strawberries (I used frozen)
Coconut oil (for greasing)
Utensils-
Medium mixing bowl
Small bowl
Measuring cups
Scales
Wooden spoon
Round cake tin
Here's what you will need:
Ingredients-

2 tsp. vanilla essence

Directions-
(If using frozen strawberries let them thaw before starting to make this recipe)
-Pre-heat your oven to 175 degrees (I have a fan oven)
-Grease the cake tin using coconut oil
-Mix the almond flour, coconut sugar, almond sugar and baking powder in the bowl and combine
- Mix the eggs, milk and vanilla essence in the small bowl
-Add the wet ingredients to the dry ingredients in the mixing bowl and stir until fully combined
-Break the dark chocolate into pieces- these can be as big or little as you like
- Add the chocolate and strawberries to your mixture and stir them in gently making sure they are evenly spread throughout
- Tip the mixture into your cake tin and smooth out
- Pop in the oven for 30-35 minutes. Check with a knife towards the end. If the knife comes out clear it ready :)
- Leave to cool for an hour or so before tucking in and enjoying each delicious bite!!
