​chocolate and walnut cake

All hail the chocolate cake!!
This recipe really does taste as good as it looks! Moist, soft and full of chocolatey goodness without the guilt!
In this recipe I used Blue Diamond unsweetened almond milk, Green & Blacks cocoa powder and Vita Coco coconut oil. All the rest of the ingredients I bought from my local Tesco and Lidl stores and are own brands!

Ingredients

Cake-
1 cup almond flour
1/2 cup cocoa powder
1/3 cup coconut flour
2 cups walnuts
1/2 tsp. baking powder
1 tsp. vanilla essence
1/2 cup almond milk
4 eggs
2 tbsp. coconut oil and extra to grease tin

Directions-

- Pre heat oven to 175 degrees C.
- Grease a medium cake tin with a small amount of coconut oil.
- Melt the rest of the coconut oil in the microwave for 30-40 seconds until melted. Leave to cool a little.
- Whilst the coconut oil cools sieve coconut flour, almond flour and cocoa into a large mixing bowl and combine. Add baking powder and mix in.
- Combine cooled coconut oil, almond milk and vanilla essence in a separate bowl.
- Pour the wet ingredients into the dry ingredients and combine.
- Add eggs one at a time and mix.
- Add the walnuts and mix. The mixture should now be a cake like batter.
- Pop in the cake tin and bake for 15-20 minutes. Check the centre of the cake with a knife and if comes out clear then its all done.
- Leave on the side to cool.

Whilst the cake cools you can make your Avocado Chocolate Mousse Frosting.
You will need-

1 ripe avocado
1/2 cup maple syrup
1/2 cup cocoa powder

This is really simple to make. All you need to do is pop all the ingredients into a blender or chopper and whizz together to make the frosting. Once the cake is cool spread the frosting over the top, add some walnuts for decoration and ta-da! Your Chocolate and Walnut cake is complete :).
