Lower carb chocolate brownie cookies
Note: Coconut oil, cacao and sweetener used in this recipe are gifted.
Does the words low carb, chocolate, brownie AND cookies really go in the same sentence?! Well, I'm here to tell you it does. These cookies come in much lower carb than a standard cookie , without the compromise on flavour ;)
1 1/2 Cups Coconut Flour
1/2 Cup Cacao
1/2 Tsp. Baking Powder
2 Tbsp. Sweetener (I used Natvia)
5 Tbsp. Coconut Oil
1 Cup Almond Milk
1 Tsp. Vanilla
100g Melted Dark Chocolate
Pre-heat oven to 170 degrees Centigrade.
Mix all dry ingredients in a bowl
Add all wet ingredients and stir well.
Melt chocolate over boiling water or in the microwave and add to the mixture
Divide mixture into even amounts and place on a baking tray.
Bake for 10-12 minutes.
Store in an airtight container for up to 3 days.
