chocolate cookies {gf}


Sometimes just simply throwing some ingredients in a bowl and hoping for the best really does work! That's exactly what I did the other day when I fancied a bit of baking that wasn't work related! I simply threw a few ingredients in a bowl and voila! Light, fluffy and super chocolatey cookies were the end result :)

(Makes 14-16 cookies)

1 Cup Plain Flour
1 Cup Self-raising Flour
3/4 Cup Cacao
1 Cup Coconut Sugar
1 Tsp. Baking Powder
Pinch Salt
2 Eggs
3/4 Cup Coconut Oil (melted)
1 Tsp. Vanilla
1 Cup Chocolate Chunks

Pre-heat oven to 170 degrees centigrade and place a piece of non-stick paper on a baking tray; pop to one side.
Mix flours, baking powder, cacao and chocolate chunks in a bowl and pop to one side.
​In a separate bowl beat sugar and oil and then add mix in eggs.
Pour this mixture into the bowl of dry ingredients and mix well until it forms a stiff batter.
Using your hands make medium balls with the mixture and then press down into cookie shapes on the baking tray.
Bake for 10 minutes.
Leave to cool completely and then store in an airtight container for up to 3 days.
