chocolate peanut butter baked oatmeal


Winter breakfasts are not winter breakfasts if you don't make some sort of baked oats!! I find that when I make baked oats it's awesome if it's for 3-4 fo you but if its just me and my husband it can be a bit too much! I know it's great to make for the next day too but I like my variety and mixing it up each day of the week so I don't get bored and stuck in a breakfast rut :).
That's why I created these single-serve Chocolate Peanut Butter Baked Oatmeal Pots! Perfect for the two of us or just one if the other isn't fancying it.

Of course, they have to be covered in peanut butter too, because there's no such thing as too much peanut butter!!

(Makes 2 small pots)
1 Cup Oats
1/2 Tsp. Vanilla
1/2 Mashed Banana
4 Tbsp. Almond Milk
3 Tbsp. Maple Syrup
Pinch Salt
2 Tbsp. Cacao Powder
4 Tbsp. Peanut Butter

method

Pre-heat oven to 190 degrees C.
Mix all ingredients together in a bowl- make sure it's all mixed really well.
Split evenly between two pots/ramekins and pop in the oven- bake for 20 minutes.
Remove from the oven and top with your favourite toppings! I used peanut butter and raspberries!
Serve immediately.
