chocolate peanut butter protein balls

I'm definitely a quick and easy kinda gal when it comes to throwing together a few ingredients to make a delicious high protein snack. I mean, who wants to be in the kitchen for hours on end to create a masterpiece that ultimately is going to be thrown in your bag and probably smashed up into small pieces before you manage to eat it. Protein balls are something I used to make ALL THE TIME but recently, haven't really done. So, I'm bringing back the protein balls today! High protein and of course flavoured with peanut butter and chocolate (best combo ever), these little balls of goodness will give you a nice little protein boost either post-workout or simply a mid-afternoon snack :)

(Makes 8 medium balls)

30g Scoop Chocolate Protein Powder
1 Cup Ground Almonds
1 Tbsp. Desiccated Coconut
2 Tbsp. Smooth Peanut Butter
3 Tbsp. Honey/Agave/Maple
1/2 Bar 75%+ Dark Chocolate

method

Mix all ingredients in a bowl until it forms a lumpy mixture- don't worry if it appears a little dry at this point.
Using your hands make the mixture into medium sized balls; pop to one side.
Melt chocolate over a bowl of boiling water or in the microwave for 1 minute. If using the microwave make sure to keep an eye on it so it doesn't burn!
Roll each ball in the melted chocolate, place on some parchment paper and pop in the fridge for 3-4 hours to set.

Store in an airtight container in the fridge for up to 5 days.
