Coffee chocolate brownies {gf}


I'm back again with even more brownies for you today! There really isn't any excuses when it comes to brownies! I love the addition of coffee to these brownies, it gives them a lovely little extra flavour; not too much, just a hint. I also added some pecans to give these brownies a different texture as well as to add another dimension to the flavour. They work so perfectly well :)

(Makes 8-10 Brownies)

1 1/2 Cups Plain Flour
2 Cups Coconut Sugar
1 1/2 Tsp. Baking Powder
3/4 Cup Coconut Oil 
2 Tbsp. Instant Coffee (in 1 Tbsp. Water)
1 Tbsp. Vanilla
1 Egg
3/4 Cup Chocolate Chips
3/4 Cup Pecans

method

Pre-heat oven to 165 degrees centigrade and grease/line a brownie tin; set to one side.
​Mix flour and baking powder together and leave to one side.
Melt coconut oil over a medium heat and add coconut sugar; mix well.
Stir in the coffee, egg and vanilla and then add the flour, chocolate chips and pecans and mix until all ingredients are combined.
Pour into your brownie tin and bake for 20-25 minutes.
Leave to cool completely before cutting and serving.

Store in an airtight container for up to 3 days.
