coffee pancakes


With Pancake Day being just around the corner it's time for some seriously good pancakes! As you know a huge passion of mine is cooking and I love it when I cook something a little different so, these pancakes may look pretty plain and simple but they certainly aren't that! These are Coffee Pancakes and they perfect for any coffee lovers out there!!

I enjoy eating big fluffy pancakes but I kept them large and thin for this recipe as I wanted to get a nice big stack and lots of pancakes!

1 Cup Self-raising Flour
1 Tbsp. Coconut Sugar
​1 Tsp. Baking Powder
1 Egg
2 Tsp. Coffee dissolved in 2 Tbsp. Water
200g Greek Yoghurt
200ml Almond Milk

method

Mix all dry ingredients in a small bowl.
Mix all wet ingredients in a separate bowl.
Combine dry and wet ingredients and mix well.
Heat a medium frying pan over a medium-high heat.
Pour around 2 tbsp. mixture into the pan and cook for one minute on each side. 
Do the same until all the batter is gone.

Top with your favourite toppings! I used Greek Yoghurt, raspberries, almonds and Mindful Bites Nut Butter!
