cranberry orange bundt cake {gf, df}


Less than one week until its Chriiiiiiiiiistmaaaaaas!! Who's mega excited to be celebrating with family and friends very soon? I'm having a chilled Christmas this year; me, the hubby and the pooch. It's our first Christmas 'with dog' so we want to be able to really spend some time with him and get lots of walks in! You can't beat a good walk in the countryside right?!

In true food blogger style I am still all over the Christmas recipes and I'm so glad I have a nice little selection for you this year. Today I'm bringing you this delicious bundt cake which you can make for dessert or simply to cut into slices and use as a little afternoon snack, your choice. It's full of Christmas flavours and of course is covered in Christmassy sprinkles too!
It's a very simple cake to bake and you don't even need to make it into a bundt cake if you don't want to. A simple round cake or even a loaf would work just as well :)

2 3/4 Cups Plain Flour
2 Cups Coconut Sugar
3/4 Cup Coconut Butter/Oil (melted)
2 Tsp. Renew Life Fibre Powder
1 1/2 Tsp. Baking Powder
1 Tsp. Salt
4 Eggs
1/3 Cup Fresh Orange Juice
​Zest 1 Orange
2 Tsp. Vanilla
2 Cups Cranberries

method

Pre-heat oven to 175 degrees centigrade and grease bundt tin with a little oil; pop to one side.
Mix flour, salt, baking powder and fibre powder in a large bowl and set to one side.
Beat coconut butter/oil and sugar in a separate bowl; add eggs one at a time and continue to beat.
Stir in vanilla and orange juice.
Add all wet ingredients to the dry mixture and mix well.
Fold in cranberries and orange zest.
Pour the mixture into your already greased bundt tin and bake for 40-45 minutes or until a knife comes out clean when checking.
Leave to cool completely and then decorate with your favourite Christmassy toppings!
