Crumbly Coffee Cupcakes


​Note: Coffee and coconut oil used in this recipe were both gifted to me.

Happy UK Coffee Week 2019! Any excuse to drink more coffee right?!
In my case it's any excuse to create more recipes including coffee because, well, coffee! This week I have a couple of recipes to celebrate this awesome week with you and I'm using my all-time favourite coffee brand; Percol (not a paid collaboration by the way but I did get the product gifted to me).
I never used to be a coffee drinker and never liked the taste of coffee but, since meeting my husband and being introduced to actually good coffee I've been converted. I'm also not going to say no to coffee cake if it's offered to me either haha! There's only one thing that involves coffee that I'm not keen on and that's coffee flavoured chocolate. I can definitely pass on that.

Anyway, I'm going waaaaay off track here...
These little coffee cupcakes are extremely delicious. Soft and cakey with a crunchy sweet topping; a perfect combination! You could even add a little chocolate in there if you liked to create a whole new dimension to the flavour!

(Makes 6-8 Cupcakes)

Cupcakes
1 1/2 Cups Plain Flour
1/2 Cup Coconut Sugar
2 Tsp. Baking Powder
1 Tsp. Cinnamon
3/4 Cup Almond Milk
1/3 Cup Coconut Oil (melted)
2 Eggs
2 Tsp. Instant Coffee (mixed with 2 Tsp. Water)

Crumb Topping
2/3 Cup Coconut Sugar
1/2 Cup Coconut Oil
1/2 Cup Flour
1 Tsp. Cinnamon

method

Pre-heat oven to 160 degrees Centigrade and prepare your cupcake cases in a tin; pop to one side.
Mix all dry cupcake ingredients in a bowl.
In a separate bowl mix all wet ingredients.
Pour the wet into the dry ingredients and mix well until it forms a smooth batter.
Pop to one side; now make your crumb topping-
Mix all ingredients in a bowl until it forms a 'crumble-like' texture.
Fill each cupcake case 3/4's of the way with your cupcake mix and sprinkle on some of your crumbly topping.
Bake for 15-20 minutes.
Remove and leave to cool completely before serving.

Great with a cuppa!
