EASY PEASY cupcakes


​I don't know if this is just me but, when looking for healthier recipes, do you find that you are bombarded with peanut butter this and chocolate that?! A lot of healthier recipes are very much around superfoods and the 'in products' of the moment. You never really come across just a standard, plain cake recipe anymore. 
Well, I am here to change that with these extremely simple and easy to make PLAIN Easy Peasy Cupcakes.

​I do love a piece of cake sometimes and I won't say no to a nice piece of lemon cheesecake or a nice big slab of chocolate fudge cake but honestly, sometimes I am happy with that plain old sponge cake :).
The beauty of these Easy Peasy Cupcakes is that they are the perfect base to really play around with flavours and toppings. You could add some fruit to make them into fruity cupcakes or if chocolate is more to your taste then you can go chocolate crazy with them too!

(Makes 12-14 cupcakes)

1 Cup Self Raising Flour
1 Cup Coconut Sugar
1/4 Cup Ground Almonds/Almond Flour
1/2 Cup Coconut Oil (melted)
1/2 Cup Almond Milk
1 Tsp. Vanilla Essence
1 egg

method

Pre-heat oven to 170 degrees C.
Mix coconut oil and coconut sugar in a bowl.
Add egg and vanilla and mix well.
Add flour and ground almonds and mix really well.
Add almond milk slowly until desired consistency is reached- it should be runny but not too runny!
Divide into cupcake cases (1 tbsp. in each one) and bake for 10-15 minutes.
Leave to cool completely and either eat straight away or top with some tasty toppings!

Store in an airtight container for up to 5 days.
