easy peasy healthy chocolate brownieS {gF}


Who doesn't love a batch of gooey, soft and warm chocolate brownies? 
When leading a healthier lifestyle people are under the impression that they can't have delicious 'treats' and therefor miss out on all things delicious. That was me 3-4 years ago. I wouldn't dare bake anything because 1. I knew I would be able to resist and 2. I didn't think there was room in my diet for anything chocolate or sweet related. Back then I never realised that I could have my cake and eat it and that actually, you can put a healthy twist on a recipe to make it that little bit better for you.

Fast foward to now and I definitely have my cake and eat it :)
Baking for me now is all about finding the healthier alternative and packing things full of goodness. Don't get me wrong, I will happily sit and eat a piece of cake or slice that's packed with refined sugar because ya know; life is all about enjoyment but, I love the experimenting with different flavours and alternative ingredients to try and create healthier versions. And that's exactly what I did here and they turned out pretty darn good if you ask me! Using coconut sugar, gluten-free flour and cacao I created these healthier brownies which are INSANE!! You can thank me later ;)

1 1/2 Cups Coconut Sugar
1 Cup GF Plain Flour 
1/2 Cup Cacao
1/2 Cup Coconut Oil
2 Eggs
2 Tsp. Vanilla Extract
Pinch Salt
1 Bar 75%+ Dark Chocolate

method

Pre-heat oven to 150 degrees Celsius and line a medium brownie tin with parchment paper.
In a bowl mix coconut sugar, flour, cacao and salt until well combined.
Add eggs, vanilla and coconut oil and mix until it forms a thick, sticky mixture.
Pour half of the mixture into the brownie tin and spread evenly.
Break up your chocolate bar and spread the pieces out on the mixture.
Pour the rest of the mixture on top and spread out evenly to 'trap' the chocolate pieces in the middle.
Bake for 20-25 mins (20 minutes for a more gooey texture-25 minutes for a firmer brownie).
Remove from the oven and leave to cool.
If you wish you can cut the brownie when still warm for an oozy chocolate centre!

Store in an airtight container for up to 4 days.
