5-ingredient easy toffee chocolate biscuits


Over the last couple of weeks we have all been inundated with images and pictures of Christmas; especially those yummy Christmas recipes that everyone keeps on popping out there, delicious!! As much as I am ALL OVER THAT too, I'm here to interrupt Christmas for just about 10 minutes and bring you something that isn't at all Christmassy. If you are all Christmassed up and don't want to feel anything but then feel free to look away now!

The other day I managed to knock up these delicious 5-Ingredient Easy Toffee Chocolate Biscuits in around 2 minutes! I hadn't planned to bake anything in particular, I just had a few ingredients I wanted to use up so I literally threw things in a bowl and hoped for the best!
Now I know they aren't the most aesthetically pleasing biscuits but damn they taste good! The little toffee pieces in these takes them to another level! You could even use chocolate chunks instead of toffee or mixed with the toffee if you wanted to make them super chocolatey and make them even more delicious!

175g Coconut Sugar
100g Coconut Butter or Oil
100g Toffee Chunks
50g Cacao
1 Egg

Method

Pre-heat the oven to 170 degrees centigrade and line a baking tray with non-stick baking paper; pop to one side.
Soften the coconut oil/butter in the microwave.
Beat oil/butter with sugar; add the egg and continue to beat.
Slowly add cacao and stir well until it creates a lovely chocolatey mixture.
Add the toffee chunks and mix.
Scoop one tablespoon of the mixture out of the bowl and pop on the baking tray; leave as a 'ball' shape.
Continue to do this with the rest of the mixture ensuring each 'ball' is quite far apart from the last; the mixture will spread out to create a biscuit as it cooks.
​Bake for 12-15 minutes.
Remove from the oven and leave to cool completely on a cooling rack.

Store in an airtight container for up yo 5 days.
