I’m all about that brunch at the moment!
This recipe is one of those throw it all in a pan and just go kind of recipes. This is a low-carb, high fat dish but it can be adapted in so many ways- add some sweet potato for a post workout re-fuel or simply add different veggies for a different flavour!
This recipe also serves one person but can easily be adapted for two or more people.

Recipe
1 Small Red Onion
1 Small Pepper
4 Chestnut Mushrooms
2 Eggs
Large Handful of Spinach
Feta Cheese to sprinkle
Salt and Pepper to taste
To cook
1 Tsp. Coconut Oil
1 Small Pepper

Method
Chop the onion, mushrooms and pepper into small pieces.
Heat the coconut oil in a medium frying pan on a medium to high heat and add in the chopped vegetables when hot. Season with salt and pepper.
Cook for around 5-6 minutes making sure you mix them up halfway through.
Turn on the grill to a high heat.
Add the spinach to the pan and mix in- it should only take around 1 minute to wilt. Don’t let it fully wilt.
Take off the heat and add the eggs to the pan followed by sprinkling the feta over everything.
Pop under the grill for 5 minutes until the eggs are fully cooked and the feta is melted.
Take out, serve and enjoy!
