​fruits of the forest baked oats


Baked oats have come to be one of my favourite breakfasts and even puddings after a meal! They are so versatile and you can add so much to them and yet make them so different just by playing around with a few ingredients. So, I thought I would make a fruity and not too sweet version using fruits of the forest.

Ingredients-

200g Oats
750ml Almond milk
3 tbsp. Ground Flaxseeds
3 tbsp. Agave nectar
200g Fruits of the forest (I used frozen ones and let them defrost. If you do this add another 100g fruits)
Flaked almonds to sprinkle

Directions-

- Pre-heat oven to 175 degrees C.
- Mix oats and flaxseed in a large mixing bowl until combined.
- Add almond milk and mix together. The consistency should be fairly watery and runny still so if it's a bit thick and gloopy then just add more almond milk.
- Add agave nectar and stir well.
- Lay fruits in the bottom of a medium-large oven dish making sure the bottom of the dish is covered. Pour over oats mixture.
- Place in the oven for 20-25 minutes.
- Remove from the oven and sprinkle over flaked almonds. Put back in the oven for a further 5 minutes or until consistency is gloopy but not thick.
