Healthy Rhubarb and Honey Crumble |

I don’t know about you but sometimes I just need that home cooked and traditional dish to really satisfy me when I want to have a pudding. Unfortunately most of those dishes come absolutely full of sugars or laced with butter and creams. Here is where this recipe comes in. You get all of the flavours of a traditional rhubarb crumble but without the guilt! Using a natural sweetener and honey to sweeten makes this recipe taste absolutely delicious.

Filling
5 Stalks Rhubarb
2 Tbsp. Natural Sweetener
Boiling Water
Crumble
1 Cup Oats
3 Tsp. Cinnamon
½ Cup Ground Almonds
Pinch Salt
3 Tbsp. Solid Coconut Oil
2 Tbsp. Honey + extra for drizzling
2 Tsp. Natural Sweetener
5 Stalks Rhubarb
2 Tbsp. Natural Sweetener

Crumble
1 Cup Oats
3 Tsp. Cinnamon
½ Cup Ground Almonds
Pinch Salt

2 Tsp. Natural Sweetener
Method
Pre-heat the oven to 160 degrees C.
Cut the rhubarb into 1cm pieces and add to a pan along with the natural sweetener and enough boiling water to cover the rhubarb in the pan.
Cook on a medium heat for 15 minutes or until the rhubarb is soft.
Drain and pour into an oven dish and put to one side.
In a mixing bowl combine all of the ingredients for the crumble topping and rub together with your fingers to make it ‘crumbly’
Drizzle a little honey over the rhubarb and pop the crumble mix over the top.
Put in the oven for 15 minutes.
Take out and leave to cool for 10 minutes before serving.
You can serve this crumble either on its own or with some Greek yoghurt or vanilla ice cream.
