Honey and Oat Cookies
What better way to kick off the week than with some delicious cookies, am I right?!
I don't know about you but when it comes to cookies I am all over anything oaty, I just love the flavour! Combine that with some sweet honey and you've got yourself a winner! They are super quick and easy and don't require any weird and wonderful ingredients.
Recipe
(Makes 8-10 small cookies)
1/4 Cup Coconut Oil (melted)
1/4 Cup Sweetener of Choice (I used Natvia)
1/4 Cup Honey
1 Medium Egg
1/2 Tsp. Vanilla
3/4 Cup Rolled Oats
1/2 Cup Wholemeal Flour
Pinch of Salt
1/2 Tsp. Cinnamon
Pinch of Baking Powder
1/4 Cup Coconut Oil (melted)
1/4 Cup Sweetener of Choice (I used Natvia)
1/4 Cup Honey
1 Medium Egg
1/2 Tsp. Vanilla
3/4 Cup Rolled Oats
1/2 Cup Wholemeal Flour
Pinch of Salt
1/2 Tsp. Cinnamon
Pinch of Baking Powder
Method
Pre-heat oven to 175 degrees Centigrade and prepare a baking tray with non-stick paper; pop to one side.
In a bowl beat coconut oil and sweetener together until blended.
Mix in egg, honey and vanilla, until smooth.
In a separate bowl mix oats, flour, salt, cinnamon and baking powder.
Pour blended honey mix into your dry ingredients and mix well until it forms a slightly stiff mixture.
Using a teaspoon, pop the mixture in small lumps on your baking tray.
Leave them as is and they will flatten out as it bakes.
Bake for 12-15 minutes or until beginning to golden.
Remove and leave to cool completely.
Store in an airtight container for up to 5 days. Best eaten within 3 days as they begin to soften more after this time.
