​Mexico Part Two

​I hope you guys enjoyed reading part one of my Mexico series and enjoyed all the food too!
​I am now here 3 days later with part two for you! It's been an INCREDIBLE 3 days, two of which were spent in the jungle. We saw some truly amazing sights and experienced some pretty awesome things too.

Monday (Day Five)

Today we went to the jungle!! We booked this little trip before we arrived in Mexico and I had been looking forward to it since we arrived.
​It was a 7.50am pick up from the hotel so we had to get up and head for breakfast at 7am. I just had a couple of boiled eggs, ham and a bagel. It was literally a quick dash in and out so it wasn't anything spectacular at all.
​Our bus arrived on time and it was only a 45 minute drive down the road to our destination- Xplor. When we arrived and saw the zip-lines high above the trees it was a case of 'Oh, we are actually going to so this!'. I'm not the biggest fan of heights but something about doing this attracted me from the beginning so it seemed silly not to, as Nike say, Just Do It. There were a few activities planned out for the day but we decided to get the zip-lining done first. We queued for a matter of minutes and then before we knew it we were at the top and it was our turn to go. A little nervously we both stepped up, hooked up and off we went! From the second we left the platform all traces of fear/anxiety had disappeared. I was in my element! We went round several different lines, some smaller ones and one absolutely HUGE one. The really fun thing was when the end came near we had to zip-line into a lake.

I would highly recommend zip-lining to anyone now that I've done it. It's a truly amazing experience.
​From zip-lining we headed onto our next activity- off-roading through the jungle. This was just pure fun and an amazing way to see the jungle and the animals in it. We saw a couple of wild deer and plenty of iguanas on our way round. The route took us through caves and over lakes too which was pretty awesome.
The off-roading was so much fun that we went back later on and did it all again!
​We decided now was time for lunch so we headed to the restaurant nearby where we had a pre-paid buffet lunch waiting. By buffet I really do mean buffet. There was SO MUCH FOOD! I went for a salad with Mexican brown rice, beef and broccoli.

After lunch we decided to take it easy and do the two final activities- swimming and paddling in underground rivers and caves. This part of the day was really something else. Swimming in crystal clear waters surrounded by rocks and caves was something truly spectacular. After the zip-lining this was definitely my second favourite activity. Just being somewhere so calm, peaceful and naturally stunning was amazing.
At the end of our day we were absolutely shattered so we grabbed a quick shower and headed to the Mexican restaurant for dinner- Rincon Mexicano. I had Tostada with Shredded Beef to start and Chicken in a Mexican Sauce with Grilled Vegetables. We also shared some Tortilla Chips with Guacamole too.
​After dinner it was straight back to the room and bed!

Tuesday (Day Six)

Today was very much a chilled out day. After spending the day being really active yesterday and going on another trip tomorrow it was safe to say nothing was going to be happening today.
​Breakfast was room service- Three Egg Omelette filled with Spinach, Chorizo and Peppers.

Lunch was at the Health Bar again where I had a Chicken Wrap and a Protein Shake and then dinner was at a restaurant we hadn't tried yet- Santa Fe Grill. We decided to go to the Bellini Bar first and have a nice chilled glass of bubbly before heading for dinner. At dinner I had Steak with Asparagus, Mashed Potatoes and Grilled Vegetables followed by a mini Apple and Berry Crumble which was very cute and delicious too. The picture below just shows how teeny the crumble was next to a standard sized desert spoon!

Wednesday (Day Seven)

A SERIOUSLY early start today! 5am wake up call and had to be in the hotel Lobby by 5.50am to catch our bus to Chichen Itza. This is one of the New Seven Wonders of the World in the middle of nowhere. Think lots of humidity, heat and LOADS of bugs!
​We were given breakfast on the bus which wasn't amazing but it was the only thing on offer. A ham and cheese sandwich and two biscuits. It was a 3 hour drive to Chichen Itza so there was no way I wasn't eating something on the way.
​3 hours later we arrived and headed on a tour around the Mayan buildings. The place was HUMONGOUS! It's far too difficult to describe in words just how BIG it is so just check out the next photo.

Yes, that's how huge it is- I look so tiny! It's safe to say it was a pretty amazing experience and the guide we had was just perfect. We learnt so much about this place it was great.
​Next stop was swimming in a Cenote- in other words- an underground freshwater lake that's fed by underground rivers. The one we were heading to was also deep in the jungle so it was around another hour on the bus to get there. This underground lake is also one of the biggest in the area and there are thousands of them. Again, the description I would give it just wouldn't do any justice to the absolutely beautiful scene we were about to see and swim in.

It really was something else. Swimming in this freezing yet spectacular place full of catfish. The water falling down from the hole in the ground above just made it even more beautiful.

​After our swim we headed for lunch. Again a buffet style lunch where I had Chicken with Salad followed by some Mayan biscuits and cakes for pudding- delicious.
​From lunch we went back to the bus and headed to our third and final stop of the day- a Colonial Town called Valladolid. We only stopped there for about 30 minutes which meant a quick ice cream stop and a trip into the local chocolate shop. We had coconut ice cream and I stocked up on some traditional Mexican Chocolate which I am very excited to eat! One is a plain dark chocolate and one is dark chocolate with lime in. I also bought a small selection pack with loads of different flavours so that will be fun to munch my way through when I get home :).
​After this final stop it was time for our 3 hour trip back to the hotel. Once we arrived back it was a case of shower and room service for dinner followed swiftly by bed :).
