Apples, cinnamon, pumpkin, nutmeg are just some of the amazing autumn/winter ingredients that I'm pretty sure will be going into every single one of my upcoming recipes! The smell in my house is just going to beyond mouth-watering!
This Apple and Cinnamon cake is created in collaboration with Natvia Natural Sweetener and is such a perfect autumn recipe. Bursting with delicious Pink Lady apples and scrummy cinnamon to really bring those autumnal feels to your taste buds. The sweetness of the apples and Natvia makes this cake taste truly indulgent but without all the guilt of a 'normal' cake.

1 Small Sweet Apple
2 Cups Oat Flour (I used Quaker Oats)
½ Cups Ground Almonds/Almond Flour
¼ Cup Coconut Flour (I used Sukrin)
½ Cup Natvia
2 Tsp. Cinnamon
1 Tbsp. Maca Powder (optional) (I used Funktional Foods)
1 ½ Tsp. Baking Powder
2 Eggs
½ Cup Almond Milk (I used Blue Diamond)
1 Tsp. Vanilla Extract
2 Tbsp. Maple Syrup
100ml Coconut Oil (I used Groovy Food)
2 Cups Oat Flour (I used Quaker Oats)
½ Cups Ground Almonds/Almond Flour
¼ Cup Coconut Flour (I used Sukrin)
½ Cup Natvia
2 Tsp. Cinnamon
1 Tbsp. Maca Powder (optional) (I used Funktional Foods)
1 ½ Tsp. Baking Powder

½ Cup Almond Milk (I used Blue Diamond)
1 Tsp. Vanilla Extract
2 Tbsp. Maple Syrup
100ml Coconut Oil (I used Groovy Food)
Method
Pre-heat the oven to 170 degrees C and grease or line a 20cm round cake tin.
Chop your apple into very thin slices and leave to one side.
In a bowl add the oat flour, ground almonds, natvia, maca powder, baking powder, cinnamon and coconut flour and mix.
In a separate bowl mix the eggs, coconut oil, vanilla and maple.
Add all wet ingredients to the bowl with the dry ingredients and combine- it should form a fairly runny mixture.
Add the almond milk a little bit at a time and mix in- you may not need it all but you want the consistency to be quite runny.
Pour the mixture into the cake tin and pop in the oven for 25-30 minutes. Check with a knife or skewer- if it comes out clear then the cake is ready .
Leave to cool completely, serve and enjoy!
Store in an airtight container for up to 2 days.
