No Bake Chocolate Oat Bars

Note: Peanut butter used in this recipe is gifted.

Coming in hot with a ridiculously easy and blooming' delicious oat bar recipe this morning! Anything with loads of oats in is an absolute winner in my eyes. Pair that with chocolate AND peanut butter and you've got yourself a delicious mid-afternoon snack to get you through that 3pm slump.
Packed full of energy and plenty of awesome chocolate peanut butter flavour, you really can't go wrong!

Makes 10-12 Bars

3/4 Cup Coconut Oil
1/2 Cup Coconut Sugar
1 Tsp. Vanilla
3 Cups Oats
1 Bar 75% Dark Chocolate
3/4 Cup Smooth Peanut Butter

Method

Melt coconut oil and sugar in a pan over a medium heat, until the oil has melted and the sugar has dissolved (around 8-10 mins).
Stir in vanilla and mix in oats.
Cook over a low heat for 5 minutes.
Melt peanut butter and chocolate in the microwave, stirring regularly to ensure it doesn't burn.
Add had of the oat mix to a lines baking dish and press down firmly and evenly.
Pour the melted chocolate mix over the base and spread out evenly.
Top with remaining oat mixture and again, spread out evenly.
Place in the fridge to set for 4-5 hours; ideally overnight.
Once set, remove and leave to come back to room temperature before cutting.

Store in an airtight container for 5 days or freeze for up to one month.
