nutty matcha energy bars {v, df, gf}


Matcha isn't something I use often in baking. I'm not overly creative with it and I end up combining it with dates and other random ingredients to create some sort of ball or bar...which is exactly what I've done here LOL! 
I can promise you though that these nutty energy bars are pretty darn good though and the extra added flavour of the match really compliments the sweetness of the dates. You also can't beat a crunchy cacao nib for that chocolate hit too!

(makes 8-10 bars)

1 1/4 Cups Dates
1/2 Cup Cashews
1/2 Cup Almonda
1/4 Cup Desiccated Coconut
1/4 Cup Mixed Seeds
2 Tbsp. Cacao Nibs
1 Tbsp. Matcha
1 Tsp. Vanilla

Pre-prepare a small baking tray/dish by lining it with some parchment paper; pop to one side for now.
Simply blend all ingredients in a blender until the nuts are broken into small pieces and all the ingredients have come together to form a crumbly paste.
Pour the mix into your baking tray/dish and press down firmly and evenly.
Freeze for 30-40 minutes.

Store in the fridge for one week or leave in the freezer for up to one month.
