These delicious crumble bars are the perfect summer/autumn crossover sweet treat. Bringing the delicious fruity and citrusy flavour of orange into a not so classic crumble bar recipe makes these bars extremely delicious and very hard to put down once you start eating them! Also using Indigo Herbs Baobab Powder brings extra vitamin C, nutrients and minerals to the bars- the perfect way to indulge but with all the goodness!
Recipe
Makes 12 Bars
Base-
2 Cups Oat Flour (simply blend oats to make flour)
½ Cup Ground Almonds or Almond Flour
4 Tbsp. Smooth Peanut Butter (I used Pip & Nut)
1 Tsp. Vanilla Essence
2 Tbsp. Maple Syrup
¼ Cup Almond Milk (I used Blue Diamond)
Date and Orange centre-
2 Cups Date Pieces or 12 Whole Pitted Dates- (I used Indigo Herbs Date Pieces)
Juice of 2 Medium Oranges
2 Tbsp. Indigo Herbs Baobab Powder
3 Tbsp. Coconut Sugar (I used Groovy Food)
Crumble top-
1 Cup Oats (I used Quaker)
3 Tbsp. Coconut Oil (solid) (I used Groovy Food)
1 Tbsp. Maple Syrup
3 Tbsp. Ground Almonds/Almond Flour
Rind of 1 Medium Orange
3 Tbsp. Coconut Sugar (Groovy Food)
Base-

method
Pre-heat oven to 160 degrees and line an 8”x11” brownie tin with non-stick paper.
In a medium bowl mix the oat flour and ground almonds/almond flour until combined.
Add the peanut butter, maple and vanilla essence and mix- add almond milk and mix well. It should form a ‘dough-like’ ball.
Place the ‘dough’ in your tin and flatten using the back of a spoon or your hands, making sure it is evenly spread out across the tin.
Place in the oven for 15 minutes.
Whilst the base is baking put the dates/date pieces, orange juice, baobab powder and coconut sugar in a blender and blend for 1 minute. Leave to one side.
Now your base should be ready so remove from the oven and leave to cool a little.
In a medium bowl combine the oats, ground almonds/almond flour, maple syrup, orange rind and coconut sugar and mix well.
Add coconut oil and using your fingers massage it into the mixture until it starts to look crumbly.
Get your date mixture back and pop onto your semi-cooked base- spread out evenly to make a thin layer.
Add your crumble mixture to the top and spread out evenly.
Bake for 20-25 minutes or until the top starts to golden.
Leave to cool and enjoy!
Store in an airtight container for a maximum of 2 days.
