When I bake I always like something that is quick and easy to throw together. I also quite like it when I make something and it doesn't make millions of portions because, quite honestly, the more I make the more I'm going to pig out on later! So, here are my Peanut Butter Chocolate Protein Balls. The recipe makes 6 medium sized balls but you can make bigger/smaller ones or double the mixture if you would like more!
Recipe-
1 scoop chocolate protein powder (30g)
1 cup ground almonds
2 tbsp. peanut butter
1 tbsp. desiccated coconut
3 tbsp. agave nectar
75% Dark chocolate for covering
Directions-
-Mix the protein powder, ground almonds and desiccated coconut in a bowl until combined
-Put the peanut butter in a microwavable bowl and microwave for 20 seconds or just long enough to soften. Add to dry mix along with the agave nectar.
-Combine all ingredients using your hands until it forms a ball. It shouldn't be sticky so if it is add some more of one of the dry ingredients until the consistency is perfect.
- Melt the dark chocolate in a microwave for around 30 seconds or until all melted.
-Roll each ball in the melted chocolate making sure the whole ball is covered.
-Refrigerate for 3-4 hours.
-Take out and enjoy!
I love this recipe as you can play around with the amounts of each ingredient. If you really like coconut, why not try adding another tbsp. in and only using 3/4 cup of ground almonds?! It can be completely catered for your taste and preference. Covering them in some Sweet Freedom Choc Shot instead of melted chocolate gives them a different flavour and makes a great pudding!
