Protein Chocolate Cupcakes
Note: Protein powder and sweetener used in this recipe were gifted.
Chocolatey and high protein, these cupcakes are one of the easiest bakes there is. Combining simple ingredients with some protein powder I created these chocolate muffins in about 25 minutes. Smothered in chocolate frosting and topped with a mini chocolate bar (cute right?!), these are sure to be a winner for anyone looking to boost their protein intake a little.

Recipe
(Makes 8-10 medium cupcakes)
1/2 Cup + 2 Tbsp. Plain Flour
75g Chocolate Protein Powder (I used Free Soul)
1/2 Cup Sweetener of Choice (I used Natvia)
1/2 Tsp. Baking Powder
1/4 Cup Cacao
3/4 Cups Milk of Choice
1 Tbsp. Melted Coconut Oil
2 Eggs
1/2 Tsp. Vanilla
1/2 Cup + 2 Tbsp. Plain Flour
75g Chocolate Protein Powder (I used Free Soul)
1/2 Cup Sweetener of Choice (I used Natvia)
1/2 Tsp. Baking Powder
1/4 Cup Cacao
3/4 Cups Milk of Choice
1 Tbsp. Melted Coconut Oil
2 Eggs
1/2 Tsp. Vanilla
Method
Pre-heat oven to 175 C/350 F and prepare cupcakes cases or grease a cupcake tin with oil; set to one side.
Mix all dry ingredients in a bowl until well combines.
In a separate bowl mix all wet ingredients well.
Pour wet into the dry and mix well until the mixture is smooth but slightly stiff.
Using a tablespoon fill each cupcake case 3/4's full.
Bake for 18-20 mins or until a knife comes out clean.
Remove from the oven and leave to cool completely before frosting or simply eating straight away ;)
Store in an airtight container for up to 4 days.
