When you receive a parcel with awesome coffee in, what's the first thing you do? Well, apart from have a cuppa you have to get creative with some recipes! So I went ahead and created some no-bake Protein Coffee Tartlets! They are a great dessert!
I hadn't planned this recipe as I wasn't expecting a lovely delivery from Percol so it was one of those 'lets just grab some ingredients and have a go' kind of recipes. Luckily, it turned out flippin' delicious. The great thing about working with coffee is you can make it as strong or as weak as you like simply by putting more or less coffee in, simple :).

Makes 8
Base
2 1/2 Cups Oats (I used Quaker Oats)
2 Tbsp. Chocolate Protein (I used Pure Blend)
2 Tbsp. Cacao Powder (I used Funktional Foods)
1 Tsp. Coffee (I used Percol Smooth Colombia)
Hot Water
1 Tbsp. Natural Sweetener/Coconut Sugar (I used Natvia)
3 Tbsp. Nut Butter (I used Pip & Nut Chocolate Hazelnut)
Filling
3 Tbsp. Honey (I used Rowse)
1 Pot (250g) Quark
1 Tsp. Coffee (Percol)
Splash of hot water
Base

Filling

Splash of hot water
Method
Dissolve both teaspoons of coffee in hot water (in separate mugs) and set to one side to cool.
Put oats, protein powder and sweetener/sugar into a bowl and combine.
Add the cacao powder and nut butter into one of the mugs of coffee, fill the mug 1/2 way with cold water and mix until well combined- It should form a paste. If too thick just add a little more water.
Pour the cacao, coffee and nut butter mixture into the bowl of dry ingredients and mix well- the mixture should be fairly solid but with some stickiness to it still.
Using a tablespoon add the mixture to your tartlet tins. If you don't have those then adding to a bun tin is perfectly fine- you will get the same result.
Using the back of the spoon or your fingers flatten the mixture to create a cup inside of the tins.
Pop in the fridge to set for 2-3 hours.
Whilst the bases are setting you can make the filling-
(The coffee you made earlier should be cool now.)
Mix all filling ingredients in a bowl until well combined. Leave in the fridge until you need it later.
Once the bases have set simply spoon in the filling and top with whatever you like! I used Lizi's Granola for a bit of added crunch. Enjoy!
If you aren't eating them straight away then simple store in the fridge for later. Please use on the same day.
