Recently I asked all of my social media followers if they like the recipes I post and if they would like to see more savoury recipes from me. I did one of those Instagram story polls and there were loads of you that asked for savoury dishes as well as sweet treats!
Now I realise not all of you that visit my blog actually follow me on social media so even though I share a lot of recipes on there, I thought this one was certainly worthy of a whole page on my blog all to itself. This recipe is a vegetarian recipe which can also be made vegan too. I realise a lot more people are following plant-based diets these days so I thought I would create something that can be tweaked ever so slightly to suit everyone from vegans all the way to people who eat meat.
Disclaimer: Just so you are all aware, even though I do eat a lot of vegan and vegetarian meals, I am neither as I do still eat meat and fish :)

I'm probably going off on a little bit of a tangent here but I only recently cut down my meat and fish consumption (in the last couple of months). It's not something I have spoken about on any of my social channels or my blog but I was always someone who used to think a meal isn't complete without meat or fish and that I wouldn't get enough protein in me if I didn't eat meat. I don't want to bore you with the details (at the end of the day you're here to see the recipe, and maybe the EPIC photos) but now I welcome a meal without meat. I find it so much easier to make a dish without any meat in and the flavours you can create is actually pretty amazing.
Just before I reveal the delicious recipe, would a blog talking about my diet and reason why I cut down meat be something you'd like to read? It's not something I really ever thought I would share but if you're genuinely interested and want to know more then definitely let me know :)

Serves 4
4 Medium Potatoes
1 White Onion
1 Tin Chopped Tomatoes
1 Tin Haricot Beans
1 Tin Kidney Beans
3 Tsp. MealWiz Moroccan Spices
2 Cloves Garlic
Feta Cheese (as mush as you like)- omit if vegan
Black Pepper to taste
4 Medium Potatoes
1 White Onion
1 Tin Chopped Tomatoes
1 Tin Haricot Beans
1 Tin Kidney Beans
3 Tsp. MealWiz Moroccan Spices
2 Cloves Garlic
Feta Cheese (as mush as you like)- omit if vegan
Black Pepper to taste
method
Cook potatoes at 200 degrees C for 1 hour 15 minutes
In a pan cook garlic and onions until slightly browned
Add all other ingredients (NOT FETA), cover and simmer for 15 minutes, followed by 5 minutes uncovered.
Once potatoes are ready, cut open and pour the bean filling over them. If having feta then sprinkle over the top.
Serve immediately.
As I mentioned above, you can omit the feta if you're vegan and if you want to add meat, you can add 200g bacon to give another dimension to the flavours.
