​Soft Ginger Cookies


​I know what you are thinking, not very 'Eastery' right? Well yes you are correct but this recipe is just too good not to share. If you like ginger biscuits or cookies then you are going to LOVE these soft and healthy ginger cookies! They have the perfect amount of ginger and are melt in the mouth soft and delicious!

Makes 12

​2 3/4 Cups Ground Almonds
1/2 Cup Coconut Sugar
​2 Tsp. Ground Ginger
1/2 Tsp. Ground Cinnamon
​1/2 Tsp. Ground Nutmeg
1 Tsp, Baking Powder
​Pinch of Salt
​6 Tbsp. Coconut Oil
​3 Tbsp. Honey
​2 Tbsp. Water
1 Egg

Method

​Pre-heat oven to 190 degrees C.
​Mix almond flour, coconut sugar, ginger, cinnamon, nutmeg, baking powder and salt in a bowl.
​In a separate bowl mix honey, water and coconut oil.
​Add the wet ingredients to the dry ingredients and combine.
​Add the egg and continue to mix until well combined.
​Place a sheet of baking paper on a baking tray.
​Roll a small amount into a ball and place on the parchment paper. Squish it down a little to make a cookie shape.
​Do the same for the rest of the mixture.
​Bake for 10 minutes until they begin to brown around the edges.
​Take out of the oven and leave to cool for an hour.

​Enjoy with a cuppa or save them as snacks for the week ahead!
