summer fruits galette

Note: Coconut sugar and oil used in this recipe are both gifted.

Ok, first things first, MY BAD for being so MIA recently. It's been a bit of a nuts and hectic time. It's still not over but I do have a week of normality this week so I'm back for a little while. And of course I'm back with the recipe for this yummy Summer Fruits Galette. A great summery dessert served with ice-cream, perfect! Expect lots of fruitiness, a little sweetness from the coconut sugar and plenty of crisp from the edges of this delicious galette base.

Base
3/4's Cup Plain Flour
1/2 Cup Oats
110g Coconut Oil (melted)
2 Tbsp. Coconut Sugar
Pinch Salt
3 Tbsp. Water
1/2 Tsp. Vanilla

Top
3 Cups Frozen Summer Fruits/Mixed Berries
3 Tbsp. Coconut Sugar
1 Tbsp. Lemon Juice

method

Pre-heat oven to 190 degrees Centigrade and line a baking tray with non-stick paper; pop to one side.
​Mix all dry base ingredients together; add all wet and combine.
Pop in the fridge for 1 hour to stiffen up.
Remove from the fridge, roll out and pop onto the baking tray.
Mix all top ingredients in a bowl.
Place on the rolled out 'pastry' leaving 1-2cm around the edges.
Lift the edges and then bake for 25-30 minutes.

Serve immediately with ice-cream for a lovely summery dessert.
