​super soft date and apricot slice


​I love baking so much!
​Today I created this lovely soft and sweet Apricot and Date Slice! I wanted to make something a little different as I always seem to go for the usual chocolate option. Here I wanted to make something fruity, soft and that little bit sweeter- but not too sweet!
​This recipe is probably one of the simples ones I have ever made with very little prep time involved- an no cooking time!!
​With a very short 'setting' time you can enjoy them pretty much straight away too :)

Ingredients-

​1.5 cups rolled oats
1/4 cup smooth peanut butter
1/4 cup honey
1 cup medjool dates
1 cup apricots
​Desiccated coconout
Flaked almonds

Directions-
​- Pop the dates and apricots in a food processor for around 30 seconds to break them up
​- Pop the dates, apricots and oats in a bowl and combine
​- Warm the peanut butter and honey over a low heat for around 1 minute
​- Pour the peanut butter and honey mix over the dates, oats and apricots in the bowl and mix. The heat of the mix should help break them dates and apricots up when mixing together. I found using my hands for this was a whole lot easier!
- Pop in a baking tray and flatten
​- Sprinkle over the coconut and flaked almonds
​- Place in the fridge for 10-15 minutes

​This will keep for a few days in the fridge :)
