​sweet peanut butter loaf


​Yes, you read that right- Peanut....Butter...Loaf!!!
​This recipe is for all of you peanut butter lovers out there! I know there are loads of you!!
​This cakey bread is of the sweet kind, but not too sweet. This has EVERYTHING you want from a loaf- soft, moist and just the perfect amount of peanut butter and sweetness.

Ingredients
1 cup Wholemeal Flour
1 Cup Almond Flour/Ground Almonds
1 Tbsp. Baking Powder
Pinch Salt
3/4 Cup Coconut Sugar
​1/4 Cup Coconut Butter
1 Cup Peanut Butter
1 Tsp. Vanilla Extract
1 Egg
​1 Cup Almond Milk
​Coconut Oil for Greasing


​Directions
​​Preheat the oven to 180 degrees (I have a fan oven)
​Grease a loaf tin with the coconut oil
​Add the almond flour, wholemeal flour and baking powder to a bowl and mix together
​In a separate bowl mix all other ingredients together, apart from the almond milk, for around 2 minutes. The batter should be quite stiff and sticky
​Add the flour mixture to the wet mixture and add the almond milk
​Mix for another 2 minutes until fully combined and the consistency is runny and like  a cake batter
​Place in the pre-heated oven for 50 minutes
​Check the loaf is cooked by placing a knife through the centre of the cake. The knife should come out clean.
​Remove from the oven and leave to cool for 30 minutes before taking out of the cake tin
​
​At this stage you can do what you wish! If you are like me and can't wait for something to be cool enough then just dig in! It tastes delicious both warm and cold and it tastes even more delicious topped with some strawberries and a drizzle of peanut butter on top!!
