vegan blueberry crumble


The cold winter months are well and truly upon us (even though as I type this it's actually 8 degrees outside) and the warming wintery foods have definitely started making an appearance on social media and well, everywhere! 
There's one dish that I really do love making in winter and that's a good crumble. It doesn't matter whether it's a traditional apple crumble or something a little more exotic; you can guarantee I'm not going to turn it down.

With this crumble recipe I decided to go down a slightly different route. Instead of your traditional apple, rhubarb or berries I thought I would stick to one fruit that to be honest, could go either way! But, the blueberries came through and the combination of flavours from the orange and maple alongside the blueberries worked absolutely perfectly! 
You could add a selection of berries if you wanted to make it a little different and add another dimension to the flavour.

(Serves 4-6)

300g Blueberries
1 Tsp. Orange Rind
2 Tsp. Maple Syrup or Honey
45g Oats
40g Slivered Almonds
40g Plain Flour
1 Sachet WheyBox Vegan Protein Powder 
1/2 Tsp. Cinnamon
1/2 Tsp. Baking Powder
2 Tbsp. Coconut Sugar
3 Tbsp. Almond Butter
1 tbsp. Coconut Oil (solid)

Note: Protein Powder is optional. Simply add an extra 30g plain flour

method

Pre-heat oven to 180 degrees centigrade.
Get your oven dish and put your blueberries, maple and orange rind in and pop to one side.
In a bowl add flour, protein powder (if using), cinnamon, baking powder, sugar, almond butter and coconut oil and rub using your fingers until it forms a crumb-like mixture.
Add almonds and oats and mix together.
Scatter the crumble over the blueberries and bake for 20-25 minutes.
Remove and serve immediately!

I recommend serving with ice-cream or custard :)
