Vegan blueberry protein pancakes {df, gf}


I recently went on the hunt for some protein pancake recipes that would give me a delicious flavour as well as light and fluffy pancakes. As I was hunting for a recipe and not having much luck I thought to myself, why am I looking for a recipe when I can simply just make one up? I mean, part of my job is to create recipes so why am I searching the internet for a recipe?!

Creating and making up recipes from scratch doesn't come easy and I often use the internet for flavour inspirations and general recipe ideas. This time I managed to make it up from scratch and with a few tweaks here and there, the final version was pretty epic!
I also made the blueberry jam topping from scratch and it was so simple and easy that I really don't know why I don't make jam more often!

Pancakes
150g Plain Flour
20g Ground Almonds
1 Sachet WheyBox Vegan Blueberry Protein
2 Tbsp. Flaxseeds
1 Cup Almond Milk
4 Tbsp. Coconut Yoghurt
2 Tbsp. Maple/Honey Alternative

Jam
200g Blueberries
2 Tbsp. Chia Seeds
2 Tbsp. Maple/Honey Alternative
2 Tsp. Lemon Juice

method

Start by making the blueberry jam-
Cook blueberries over a medium to low heat until they begin to soften and become syrupy. Add the remaining jam ingredients, mix in well and pop to one side to cool.
Now make your pancakes-
Blend all ingredients in a blender or beat well in a mixing bowl. The mixture will be slightly thicker than a normal pancake mix so if you want it thinner then simply add more milk.
Heat a frying pan over a medium heat and then add a dollop of the mixture to the centre of the pan.
Cook for 1 1/2-2 minutes on each side or until they become golden.

Top with blueberry jam and any other toppings you wish!
