vegan Pear breakfast muffins


​It's a brand new year which means Veganuary has hit and lots of people are taking the challenge to go Vegan for the whole month of January. I personally am not taking part in Veganuary but I know a lot of you that follow me and visit my blog do so I thought I would have a go at making some vegan recipes. Even though I am not taking part in Veganuary I will be trying to make more effort to eat more plant-based meals which gives me an opportunity to play around with different ingredients and recipes that I may not usually go for. It's going to be a fun month of experimenting and cooking a little differently but I am looking forward to the challenge!

As my first attempt at making vegan muffins I must say these are rather good! I did find it a little challenging putting the recipe together as I'm used to using eggs in a lot of stuff I make but honestly, these have turned out pretty frickin' delicious! I used as picture of your standard muffin ingredients (flour, sugar, etc) and combined it with some Muesli I had left over in the cupboard. The combination actually works really well and brings a new dimension to a classic recipe.

Makes 12

​150g Muesli (I used Mornflake)
1/4 Cup Coconut Sugar (I used Groovy Foods)
1 Cup Plain Flour
1 Tsp. Baking Powder
250ml Almond Milk (I used Blue Diamond)
1 Pear
3 Tbsp. Almond Butter (I used Pip & Nut)
2 Tbsp. Coconut Oil (I used Lucy Bee)
1/4 Cup Chopped Pecans

method

Pre-heat the oven to 180 degrees C.
Chop the pear into small pieces and place to one side.
In a large bowl mix all of the ingredients apart from the pear- the mixture will be quite lumpy due to the muesli.
Add the chopped pear and mix in well.
Divide mixture into muffin cases- 1.5 tablespoons in each muffin case.
Pop in the oven for 20-25 minutes, checking frequently after 15 minutes.
Remove from the oven and leave to cool completely.

Store in an airtight container for 2-3 days.
