veggie pesto pasta


Ok so I realise I've been very lacking in the savoury dishes over the years so, I'm trying to make up for it now. After asking my lovely followers on instagram what they'd like to see, savoury came up top trumps! So, here is dish one of what will hopefully be many more meals to come! 
This one is super simple and great if you just want to make something quick. You're talking around 30 minutes for a dish that serves 6 people! Winning!

(Serves 6 as a main or 8 as a side dish)

​1 tbsp olive oil    
3 cloves garlic, minced    
450g wholewheat pasta    
1/2 tsp salt    
1 cup parmesan cheese, grated    
1 (270ml) jar of store-bought green pesto    
1 red pepper, diced    
1 small red onion, diced    
1 head broccoli, chopped


method

Heat oil and garlic over a medium heat.
Cook pasta as per pack instructions.
While the pasta cooks and the garlic and oil are heated; add pesto, salt, red pepper, onion and broccoli to the pan. Cook for 8-10 minutes or until vegetables are soft.
Drain the pasta and add to the cooked vegetables.
Add 3/4's of the parmesan cheese and mix well.
Pour into an ovenproof dish, sprinkle remaining parmesan over the top and pop under the grill for 10-12 minutes; until the cheese begins to golden.
Remove and serve.

​This dish is perfect for a large family and can also be kept in the fridge for a couple of days and be used for lunches :)
