When California Walnuts asked me to be a part of their #WellnessCracked campaign, who was I to say no?!
As well as being one of my favourite nuts to snack on, walnuts are a staple in my baking cupboard. Did you know there are so many benefits to this so-called super nut?

As part of their campaign, I was challenged to create a recipe using only five ingredients! Immediately I knew what I wanted to make and was quickly putting pen to paper to see what ingredient combinations I could come up with using California Walnuts mild, sweet and naturally creamy walnuts.

Recipe
Serves One
Makes 3 medium pancakes
1 Medium Banana
1 Egg
1/2 Cup Oats
1/2 Cup California Walnuts
Dash of Almond Milk
Coconut Oil to cook
Makes 3 medium pancakes
1 Medium Banana
1 Egg
1/2 Cup Oats
1/2 Cup California Walnuts
Dash of Almond Milk
Coconut Oil to cook
Method
Put all of the ingredients in a food processor/blender and blend until smooth. It will take a few minutes to really break up the walnuts.
The consistency of the mix should be nice and runny. If it isn't then just add a little more almond milk until you have the correct consistency.
Heat a little coconut in a frying pan on a medium to high heat.
Pour the mixture into the pan a little bit at a time and cook for around 40-50 seconds on each side.
Top with all your favourite toppings!
I used coconut yoghurt (Coconut Collaborative), crushed California Walnuts, pomegranate seeds and maple syrup.
